Beef and sweets bowl

Sweet potatoes, ground beef, goat cheese, greens dinner bowl

Ingredients:

3 sweet potatoes cut into 2-3 inch pieces

1lb ground beef

3-4 handfuls of mixed greens (you can use spinach or arugula too)

2-3 oz of goat cheese

1/2 cup of olive oil (more or less depending on how dry or oily you prefer)

salt and pepper

Directions:

Preheat oven to 450 degrees

Toss sweet potatoes in 1/4 cup of olive oil and salt.  Bake for 30 minutes stirring once.

While potatoes are cooking, brown ground beef over medium high heat. I buy really good quality ground beef so the flavor is amazing and it needs no seasoning. You can add some spice here if you prefer. 

Toss greens and goat cheese in a bowl and top with cooked ground beef.  The cheese will melt under the meat.  Add the sweet potatoes and remaining olive oil. Toss and add additional salt (if desired) and pepper. 

Makes about 2 servings.
