Spinach salad with Castelvetrano olives, chopped walnuts, manchego cheese


4 handfuls raw spinach - torn into smaller pieces

1 cup chopped raw walnuts

1/2 jar of Castelvetrano olives (you can use any olives but these are THE best)

1/2 of a red onion diced

1 cup Manchego Cheese shredded or shaved


1/4 cup of Baker & Olive Sicilian lemon balsamic

1/4 cup of Baker & Olive Walnut Oil

Himalayan sea salt and black pepper

Place all the ingredients into a large bowl and toss until just combined.
