Simple Italian Salad - La Dolce Far Niente

a few handfuls of arugula 

several shavings of Pecorino (you can sub Parmasean but I prefer sheep's milk cheeses as they are easier for digestion)

a handful of Castelvetrano olive sliced

a few slices of Mortadella, pancetta or prosciutto cut into bite size pieces

a few leaves of basil roughly chopped

a few squirts of olive oil

salt and pepper


Throw everything in a bowl and toss.

Enjoy with a Sauvignon Vert and maybe some melon on the side.
